Spicy Sriracha Chicken Veggie Bowls

Here’s an easy Meal Prep idea you can make in bulk or put together for a healthy dish when you’re short on time!! Use your favorite veggies or sub for your protein of choice! You can also change out any of the seasonings if you wish!

Ingredients:

  • 1 Chicken Breast (6-8 oz)
  • 2 Red Peppers
  • 1 Purple Onion
  • Spicy Sriracha or Sriracha Mayo Sauce (used here) or your favorite sauce to top with
  • Chili Powder
  • Salt and Pepper
  • Garlic Powder
  • Oregano and Thyme seasonings ((or you can use Italian seasoning instead of oregano and thyme))
  • Paprika
  • Cooking Spray / Olive Oil

Directions:

  1. Spray a skillet with cooking spray or drizzle olive oil to cook your peppers and onions
  2. Cut up chicken breasts into small bite size pieces
  3. Mix spices together in a bowl
  4. Spray a separate skillet with cooking spray or olive oil and place chicken into pan
  5. Spray chicken or toss in olive oil and add seasoning mix while cooking
  6. Chop up peppers and dice onions
  7. Cook chicken in skillet until brown
  8. Cook veggies until soft
  9. Once everything is finished cooking, grab two serving bowls
  10. Divy up the veggies into the bowls and then top with chicken and drizzle sriracha or other sauces on top!
  11. Enjoy
