Breakfast Quesadillas

Hola travel Fam!! This foodie Friday we’re bringing you a recipe from one of our favorite cuisines, Mexican Food!! We love tacos, nachos and quesadillas!! Who says you can’t have quesadillas for breakfast?! 

Here’s a quick and easy recipe to make at home or for on the go!! If you try this recipe, let us know how you liked it! 

Ingredients

-Made with eggs or eggwhites

-Dairy free feta cheese (or any cheese you’d like) 

-Sliced deli chicken 

-Whole wheat tortillas

-olive oil/cooking spray 

-ghee optional 

Directions: 

  1. First cook your eggs in a separate pan. 
  2. In another pan, Spray with olive oil or coat your tortilla in 1/2 TBSP ghee butter 
  3. Place your tortilla into the pan. 
  4. On one half of the quesadilla, layer the deli slices first, then the eggs, then the cheese 
  5. Fold quesadilla in half and flip till both sides are golden 
  6. Serve with salsa or taco sauce & enjoy!
