Happy Friday Travel Fam! Another week and another new recipe!! These teriyaki shrimp bowls are so yummy and super easy to make, at home or for your travels! I personally love using shrimp as a source of protein when I am working my flights, or for a quick meal at home. You can easily toss a whole bag into a pan on the stove, add some veggies and sauces and have a delicious healthy meal! I used a pre-made teriyaki sauce to save on time! The shrimp I used is a bag of frozen shrimp from LIDL. There’s about 4 servings in each bag. See the full ingredients and recipe below!
Ingredients
- One bag of thawed shrimp
- One whole avocado
- Cherry Tomatoes
- Ben’s Ready Rice
- Black Beans
- Everything but the bagel seasoning (optional, but I like the added taste) *or use sesame seeds*
- Pre made teriyaki Sauce (I used two table spoons per serving size so there’s 4 serving sizes in the bag of shrimp I use, so 6 tablespoons)
- 1 Tbblsp Olive oil
- Ginger seasoning
- 1-2 tblsp honey (optional, if you want it a little sweeter)
Directions
- Chop up avocado (use 1/4 of avocado for each bowl)
- Cut three cherry tomatoes in half for each bowl
- Measure 1/4 cup of black beans per bowl
- Spray pan with cooking spray and cook thawed shrimp for 2 mins per side until they’re pink
- Add olive oil, teriyaki sauce and garlic and ginger seasonings (and honey if using) to the pan and cook for another 2-3 mins
- Mix up the shrimp in the sauce
- Remove the shrimp to a bowl or plate
- Cook the remaining sauce for a few more minutes until it thickens (it will boil a little bit)
- Cook Ben’s Ready Rice in microwave (takes 1 min and a half) and let it cool
- Pour remaining sauce over shrimp
- In small containers, measure 1/4 cup brown rice per bowl
- layer with black beans, avocados, tomatoes, and place 1/4 bag of shrimp on top (15 pieces)
- Top with everything but the bagel seasoning and enjoy!
